Quick & Easy Dinners
With the Western Cape having somewhat of a chilly start to Spring – or was that Summer – we’ve got some great quick winter warmers for dinner inspiration for this unseasonably cold day.
SPICY BUTTERNUT SOUP
500 GMS BUTTERNUT SKINNED AND CUBED
1 SMALL ONION .CHOPPED
2 ½ ML ( HALF A TEASPOON) CURRY POWDER
1 ML ( QUARTER TEASPOON) CRUSHED FRESH GINGER OR GROUND GINGER
625 ML CHICKEN STOCK
SALT AND PEPPER
125 ML ( HALF A CUP ) OF CREAM
COMBINE BUTTERNUT, CURRY POWDER, ONION , GINGER AND STOCK. COVER AND SIMMER FOR 25 MINS UNTIL THE VEGETABLES ARE TENDER. PROCESS WITH A FOOD PROCESSOR , CHECK THE SEASONING AND BLEND IN THE CREAM. SCATTER TOASTED FLAKED ALMONDS ON TOP ( OPTIONAL)
NOURISHING PEA SOUP
1 CUP SPLIT PEAS
1 MEDIUM ONION
1 CARROT
1 LARGE POTATO
4 SPRIGS SOUP CELERY
4 SPRIGS PARSLEY
SEASONING
2 OR 3 RASHERS BACON
CHOP VEGETABLES AND BACON , FRY IN A LITTLE OIL. ADD 1 AND A HALF LITRES WATER AND BRING TO THE BOIL. ADD SEASONING . RINSE SPLIT PEAS IN COLD WATER AND ADD TO THE LIQUID. SIMMER FOR 30 MINS . PROCESS TO A CREAM AND SPRINKLE WITH PARSLEY . SERVE WITH CROUTONS
