Broccoli Mandarin Salad

A great cold salad to enjoy for summer. Broccoli is a perfect way to add protein and fibre to your diet with relatively few calories.
Marinating time 5 hours


For the Salad

  • 4 Cups Fresh broccoli florets Separated into small bites
  • ½ Cup Raisins
  • 8 Slices Bacon Optional, cooked and sliced
  • 2 Cups Fresh mushrooms Sliced
  • ½ Cup Slivered Almonds
  • 1 Tin Mandarin oranges Drained
  • ½ Red onion Sliced

For the Dressing

  • 2 Eggs
  • ½ Cup Sugar Optional, to taste
  • 1 Tbsp Cornstarch
  • 1 Tsp Mustard powder
  • ¼ Cup White wine vinegar
  • ¼ Cup Water
  • ½ Cup Mayonnaise


For the dressing

  • Whisk together eggs, sugar, cornstarch and dry mustard powder
  • Add vinegar and waterand cook slowly until thickened
  • Remove from the heat and stir in mayonnaise
  • Set aside to cool

To assemble the salad

  • Marinate the broccoli florets in the dressing for a few hours
  • Add the remaing ingredients and toss well before plating
  • Chill before serving
