
Broccoli Mandarin Salad
A great cold salad to enjoy for summer. Broccoli is a perfect way to add protein and fibre to your diet with relatively few calories.
Ingredients
For the Salad
- 4 Cups Fresh broccoli florets Separated into small bites
- ½ Cup Raisins
- 8 Slices Bacon Optional, cooked and sliced
- 2 Cups Fresh mushrooms Sliced
- ½ Cup Slivered Almonds
- 1 Tin Mandarin oranges Drained
- ½ Red onion Sliced
For the Dressing
- 2 Eggs
- ½ Cup Sugar Optional, to taste
- 1 Tbsp Cornstarch
- 1 Tsp Mustard powder
- ¼ Cup White wine vinegar
- ¼ Cup Water
- ½ Cup Mayonnaise
Instructions
For the dressing
- Whisk together eggs, sugar, cornstarch and dry mustard powder
- Add vinegar and waterand cook slowly until thickened
- Remove from the heat and stir in mayonnaise
- Set aside to cool
To assemble the salad
- Marinate the broccoli florets in the dressing for a few hours
- Add the remaing ingredients and toss well before plating
- Chill before serving
